Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large zucchini sliced
  • 1 large bell pepper any color, sliced
  • 1 large red onion sliced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes halved

Instructions
 

Preheat Oven:

  • Set your oven to 400°F (200°C).

Prepare Chicken:

  • Mix Parmesan cheese, panko breadcrumbs, basil, oregano, salt, and pepper in a shallow dish.
  • Dip each chicken breast into the breadcrumb mixture, pressing gently to adhere.

Arrange Vegetables:

  • Arrange the sliced zucchini, bell pepper, and red onion in a single layer on a large sheet pan
  • Drizzle with olive oil and sprinkle with minced garlic.

Add Chicken:

  • Place the Parmesan-crusted chicken breasts on top of the vegetables.

Add Cherry Tomatoes:

  • Scatter the cherry tomatoes around the chicken.

Bake:

  • Bake in the oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
